  1. How Long to Cook Sea Scallops

    Heat oil in a 12-14-inch non-stick sauté pan over high heat; pan should be so hot you can see slight smoke. Place scallops, flat side down, in the pan, keeping them from touching; cook for approximately 1.5-2 minutes, or until the bottom forms a caramel colored crust. Flip the scallops, and cook for an additional 1-1.5 minutes. Remove the scallops from the pan.

     

    Do not overcrowd the pan.
    Do not move the scallops once you put them into the pan.
    The scallops should be served while their centers are still slightly translucent because they'll continue to cook after you remove them from the heat. Perfectly cooked scallops should be springy if you press them with your thumb. If they are firm or stiff, they're overcooked.
